Kathleen M raves about the sakil pa’k (pumpkin seed dip) that she buys at El Molino Central in Sonoma. Though the tortillas and chips made from house-ground masa and the mole dishes are great at the restaurant, Kathleen M thinks it’s the sakil pa’k that really merits attention.
Also called sikil or zikil pa’k, this dish has Yucatán origins, points out Robert Lauriston. Steve from Rancho Gordo started a project with his friends to cook all the recipes from Diana Kennedy’s The Essential Cuisines of Mexico, and in a post about the project included Kennedy’s recipe, which he served on fried eggs and with poached chicken.
