Many of us fall back on classics like ratatouille, eggplant parm, and pasta with eggplant, but there is plenty more to do with an aubergine.

Gio is a fan of caponata, a Sicilian eggplant spread. She likes Jamie Oliver’s recipe and these caponata crostini. For another crostini-topper, try CHOW’s Pickled Eggplant.

Eggplant can also be elegant. chowser recommends Tom Colicchio’s eggplant Napoleons, fried eggplant layered with eggplant caviar and a lemon vinaigrette. katecm slices eggplant thinly, dredges in flour, egg, and breadcrumbs, then fries. Next, she places a small mound of homemade pasta mixed with duxelles on each slice and rolls it up. Then she tops with fresh tomato sauce and bakes to heat through.

Or go really creative and use a dehydrator to make eggplant bacon, raw eggplant in a spicy, smoky marinade. It’s “a delightful munch and would make a nice garnish,” says DuchessNukem.
