Those who have been spoiled by the pizzas of Naples need no longer search fruitlessly for American counterparts: For pizza with straight-from-Naples flavor, look no farther than A16, the only restaurant in the Bay Area certified by the Verace Pizza Napoletana Association, says Robert Lauriston.
A16, Pizzeria Picco, and Pizzaiolo are the only local pizzerias whose product truly resembles the wood-fired, charred-edged pizzas of Naples, says Amy G, who used to live there.
Pizzeria Delfina is a hound favorite, although its pizzas are more like Neapolitan-meets-NY pies, with slightly thicker, crispier crust. They’re also made in a gas oven. The salsiccia pizza is particularly excellent, says DebitNM, with creamy mozzarella, just the right amount of fresh, light-tasting sauce, nicely flavored sausage, and julienned red peppers and onions.
Gialina makes another delicious pizza that’s not quite traditional: “A rather looser interpretation of ‘Neapolitan style’ than what you’ll find at A16,” says mdg.
Tony Gemigniani, the master pizza-maker at Pyzano’s, has won a pizza-making contest in Naples, but without a wood oven the pizza at Pyzano’s is not that award-winning version. According to Tablehopper, though, his new place, scheduled to open soon, will double as a pizzeria (with wood-fired oven) and an international school of pizza.
In the South Bay, Pizza Antica makes a pie that “on a good day is very reminiscent of pizzas I’ve had in northern Italy,” says mdg.
And rworange is keeping a hopeful eye on the forthcoming Pizza Nostra, to be headed by a pizza chef from Naples.
