But a taste test reveals that each of these standards “is just better than usual … the sag tastes of spinach and the paneer is toothsome; the lamb kababs are pink-centered chunks of yogurt marinated spices; the chicken [korma] is meltingly tender in a rich curry of cashew with the surprise of sultanas [a.k.a. raisins].”
