Mesquite “flour” is a powder made from ground-up mesquite pods, says bella_sarda, and it lends a really cool flavor to baked goods, “but you only substitute a portion of regular flour for mesquite or the flavor would be too strong,” says bella_sarda.

goodhealthgourmet loves the earthy, fruity, slightly sweet flavor that gluten-free mesquite flour gives to baked goods, “with hints of cinnamon, coffee, and chocolate.” goodhealthgourmet recommends substituting up to 25 percent of regular flour with mesquite flour. And sift before measuring, “because it has a tendency to be very lumpy,” says goodhealthgourmet.
