Cod is a mild white fish that works with a variety of seasonings and holds up well to cooking by several methods.

cassoulady dips cod in a mixture of egg and milk, then coats it with panko and sautés it in olive oil and butter; serve with lemon wedges and parsley. Breadcrumbs add texture to roasted cod dishes, too. shaebones loves sear-roasted cod with horseradish aïoli and lemon-zest breadcrumbs, and GretchenS is a fan of roasted cod with basil pesto and garlic breadcrumbs and roasted cod with lemon-parsley crumbs, for which she uses half panko and half Ritz cracker crumbs.

Cod is a good fish for poaching. katecm makes a spicy poached cod by placing the fish on a bed of chorizo, peppers, tomatoes, onion, and garlic, and adding chicken broth, wine, and smoked paprika.
