Avjar, a delicately flavored concoction of puréed smoked red peppers, eggplant, oil, and spices, turns everything it touches into culinary gold, says darcia. It’s a staple of Balkan cuisine, found throughout central Europe, but it’s not commonly found in the United States. However darcia discovered a jar of it in a specialty grocery store and now describes it as an “addiction” suitable for everything savory, from pizza to pasta to sandwiches. “I eat it right from the jar!” she says.

lagatta also loves avjar, as well as “its lumpier cousin pindjur, which is more like a finely-chopped ratatouille.”
