Cooking with Winter Ingredients

Cooking with Winter Ingredients

The cold-weather produce you should cook with now

It’s winter, so you’re stuck with potatoes and onions, right? Maybe some cabbage—purple, if you’re lucky. Winter produce gets a bad rap in comparison to the delicate flavors of spring and the vibrant colors of summer. But consider the citrus; mull over the cooking greens. Revel in the kiwi! Here are some ideas to get you to step away from the beef stew for one cold winter night.

Avocado

  • Black Bean Cakes with Fried Eggs and Avocado Crema

Banana

  • Sour Cream–Banana Bread

Beet

  • Roasted Beet and Chèvre Grilled Cheese

Beet Greens

  • Beet Greens and Feta Pasta

Blood Orange

  • Blood Orange Vinaigrette

Cabbage

  • Easy Chicken and Chive-Dumpling Soup

Chard

  • Braised White Beans with Chard

Cipollini Onion

  • Roasted Onions Agrodolce

Dandelion Greens

  • Wilted Greens with Balsamic Fried Eggs

Escarole

  • Escarole Salad with Tomato-Gorgonzola Toasts

Grapefruit

  • Candied Grapefruit Zest

Jerusalem Artichoke

  • Jerusalem Artichokes with Crispy Prosciutto

Kale

  • Winter Greens Lasagne

Kiwi

  • Kiwi Cheesecake

Mango

  • Coconut Farro Porridge with Mango

Meyer Lemon

  • Mini Éclairs with Meyer Lemon Filling

Rutabaga

  • Rutabaga with Mustard and Scallions

Turnip

  • Turnip and Pear Purée
