Birch juice, or birch sap, is a Russian drink made from the freshly extracted sap from birch trees. It’s very refreshing, says Passadumkeg, tasting a bit like watery maple syrup, though not as sweet. It’s difficult to find outside of Russia and Ukraine, says msto, though you can find a version in some Russian grocery stores, heavily diluted with lemon juice, sugar, and water. The real thing tastes much better, but short of tapping your own birch tree, it’s almost impossible to find in the United States.
