Mofongo’s, a pop-up that operates in the evenings every day but Monday at La Espiga Café, is pure New York–style Puerto Rican, says lil mikey. At Mofongo’s, the cook also mixes the mashed plantain with cracklings—your choice of pork or chicken. This adds interesting crunchy, salty emphasis to the mofongo experience, says lil mikey.
