It’s that time of year again—notebooks and pencils and homework. But cookbook author Dorie Greenspan might not mind getting homework these days: Her back-to-school experience was learning all about chocolate at a seminar sponsored by Valrhona. Where do I sign up for chocolate school?

For those of us who don’t get to attend such delicous classes, Dorie shares what she learned on her blog. You can read about chocolate cultivation, odor versus aroma, and the fact that we may actually have six—rather than five—taste receptors on our tongue (some people think that sixth receptor zeroes in on the flavor of licorice). If you’ve ever wanted to know how to best taste chocolate, Dorie explains the basics. She even shares what a chocolate-school goodie bag looks like.

What I want to know is this: If you goof off at chocolate school, are you made to stay after for remedial education? That might not be half-bad.
