Josef Centeno’s latest restaurant, Orsa & Winston, is omakase only, and so far dishes like crudo of Japanese mackerel and coddled egg with pancetta and sherry cream have Chowhounds singing the chef’s praises. The restaurant is also just a hop, skip, and a jump from Centeno’s other two kitchens, forming a foodie trifecta in downtown LA’s Historic Core.
