In the recent Chowhound celebration of the robust, Portuguese-influenced American cooking at Louro, fans neglected to mention the addictively delicious butter that comes with very good bread at Chef David Santos’s new Village restaurant. Oversight corrected: rrems reports that Louro’s “Portuguese butter” (pictured), enhanced with lard and spices, is “rich with pork and a bit spicy, a superb spread.” Lard isn’t Santos’s only upgrade on butter: Sometimes he throws duck fat into the mix, Dave Feldman reports, “and I like that even better.”
