Milk and butter aren’t the only route to great-tasting potatoes. Here’s a handful of Chowhound ideas for dairy-free mashed potatoes with tons of flavor:
• Add extra-virgin olive oil and enough of the potato cooking water to achieve a moist, creamy texture.
• Use chicken or vegetable stock in place of the milk and cream, or cook the potatoes in stock—you won’t even miss the butter.
• Sauté chopped garlic in olive oil and add it (with the oil) to the mashed potatoes.
• Use the cooking water for moistening and add one or more of these flavorings: caramelized onions, mustard, chopped fresh herbs, minced scallions.
