Now that we’re deep into fall, many types of winter squash are available. And while many cooks’ go-to preparation is baking hard squashes with brown sugar or honey to enhance their natural sweetness, Chowhounds recently shared other ideas.

Roasting is a popular method. Chocolatechipkt tosses cubes of seasoned squash with olive oil and spices like smoked paprika, ground ginger, or cumin and roasts at 400 degrees Fahrenheit for about 45 minutes. This recipe for roasted delicata squash and mushrooms doesn’t specify a roasting temperature, but GretchenS suggests 425 degrees Fahrenheit.

Small acorn squash is the perfect size for stuffing, since half is a nice individual serving. Sausage is a popular stuffing base: melpy likes this version with a molasses glaze, while chileheadmike makes a stuffing of Italian sausage, onion, mushrooms, thyme, Worcestershire sauce, and reduced red wine. Less traditional favorites include this butternut squash and caramelized onion galette, or fun-to-eat cheese fondue baked in a pumpkin.
