To native sons and daughters, St. Louis–style pizza is a thing of beauty: a cracker-crisp crust covered in thick, sweet tomato sauce and “Provel,” a processed cheese mixture that combines cheddar, Swiss, and provolone.
A recent Chowhound thread revealed that Tony’s in North Beach, famous for Neapolitan pies, also sells a St. Louis–style pizza that The Dive says is better than anything you can get in St. Louis. The sauce is just right, and the cheese has better flavor, yet retains the “gooey, plasticky” texture of the original.
