A nicely cooked fish makes an elegant centerpiece for a company dinner, but it’s a pain to have to fuss around in the kitchen when you’re entertaining. Hounds recommend some quick, simple-to-execute techniques and recipes that look and taste impressive, but won’t keep you from your guests.

Several hounds are fans of fish baked in parchment paper, and say it’s a versatile technique with a dramatic presentation. TeRReT feels it’s great for parties because it’s a forgiving method that works with many types of fish and seasonings. And ttoommyy says, “I think individual packages are especially nice when presented on a plate with the parchment creatively torn open right before service.”

Depending on what’s in season, TeRReT will add garlic, herbs, slices of citrus, and perhaps a splash of wine, along with vegetables that will cook in the amount of time the fish needs. In the summer, peach or nectarine slices work well with mild fish, TeRReT says. GraydonCarter finds Alton Brown’s recipe for red snapper en papillote “easy and delish.”

MARISKANY likes to serve simple baked fish with a lid of seasoned breadcrumbs. To make it, preheat the oven to 375 degrees Fahrenheit and mix panko with crushed garlic, salt and pepper, and vegetable oil. Spread this mixture over the fish and bake for 12 to 15 minutes, depending on the thickness of your fish. “The breadcrumbs will be a beautiful deep golden brown and the fish will be perfectly cooked,” MARISKANY says. “Believe me, you and your guests will love it.”
