5 Pastas to Cozy up With This Fall

Fall is well under way and the weather is finally starting to cool down. For me, cool weather means comfort food. Soups, chilis, braises, and of course hearty pastas. Some people would probably find soup or chili the ultimate fall comfort food but in my mind, it’s gotta be pasta. I really can’t think of anything more satisfying then devouring a warm plate of creamy pasta with a glass of wine on a cool fall evening.

It can be as simple as a little bit of Parmesan and olive oil, or a little more adventurous with prosciutto and mushrooms. You can make a night of it and make fresh pasta, or boil it right out of the box. It doesn’t really matter; you know it’s going to be good no matter what.

There are endless possibilities when it comes to pasta, and for me, the key to taking it to the next level is to keep it simple. That doesn’t mean you shouldn’t be able to have fresh vegetables or meats in your pasta. It just means that you should focus on one or two added ingredients and let them shine. After all, it’s the simplest combinations that are often the best. 

So now that you know pasta is my favorite comfort food, what's yours? Here’s a look at 5 pastas that you should definitely bookmark for the next rainy day.  

1. Pasta with Mushrooms and Prosciutto

Like I said, focus on one or two ingredients and make them shine. Here, it’s mushrooms that are sautéed to perfection along with crisp prosciutto. All brought together in a creamy sauce. How good does that sound?

2. Classic Spaghetti Carbonara

One of my all time favorite pastas is Spaghetti Carbonara. It’s also one of the simplest to make. The sauce is made from eggs, Parmesan, and black pepper. It all comes together in just a few minutes from the time the pasta is cooked.  I like to top mine with a sous vide yolk.

So many layers of goodness here I don’t know where to begin. From homemade tomato sauce to an incredible ground veal and spinach filling, the lasagna is one for the books.

4. Butternut Squash and Tomato Pasta with Kale and Chorizo

Pasta is the perfect place to utilize seasonal ingredients like butternut squash. Not only can squash be used as vegetable component in pasta, but it’s also a great way to put a unique flare on a classic tomato sauce.
