Easy, Cheesy Pizza Beans Recipe

Ingredients
2 tablespoons olive oil
1 small yellow onion, diced
2 garlic cloves, chopped
½ teaspoon dried oregano
2 ½ cups marinara sauce
2 (15-ounce) cans cannellini or butter beans, drained
3 cups baby spinach
8 ounces shredded mozzarella cheese
¼ cup grated parmesan cheese
8 fresh basil leaves
1 teaspoon red pepper flakes
Directions
Heat the olive oil in a large skillet over medium-high heat.
Add the onion and cook, stirring occasionally, until softened and starting to brown, 5 to 8 minutes.
Reduce the heat to medium, add the garlic and oregano, and cook until fragrant, about 1 minute.
Pour in the marinara sauce and beans and stir to combine.
Cook, stirring occasionally, until the sauce starts to bubble, 3 to 5 minutes.
Add the spinach in two batches, stirring until each batch wilts into the sauce.
Reduce the heat to low and sprinkle the mozzarella evenly over the top.
Cover the skillet and cook until the cheese is melted, 4 to 6 minutes.
Remove the skillet from the heat and sprinkle with the parmesan.
Garnish the beans with basil and red pepper flakes and serve with optional baguette.
