Egg Salad Club Sandwich Recipe

Ingredients
  • 8 large eggs
  • ⅓ cup mayonnaise
  • 1 tablespoon finely chopped drained pickles (or pickle relish)
  • 1 tablespoon finely chopped parsley leaves
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 6 slices crusty bread, toasted
  • 6 slices crispy bacon, cut in half
  • 6 lettuce leaves
  • 12 slices tomato
Directions
  1. Bring 2 to 3 inches of water to a boil in a large pot.
  2. Carefully place the eggs in the water, reduce the heat to low, and cook for 11 minutes.
  3. Once 11 minutes have passed, immediately transfer the eggs to an ice bath to cool completely.
  4. Once they’re cooled, peel and chop the eggs.
  5. Transfer the chopped eggs to a bowl.
  6. Gently stir the mayonnaise, pickles, parsley, mustard, salt, and pepper into the eggs.
  7. To assemble the sandwiches, layer 4 bacon pieces onto one slice of toasted bread, then layer 2 slices of lettuce and 2 slices of tomato on another slice.
  8. Top the bacon with egg salad. Repeat the process to assemble all 3 sandwiches.
  9. Cap, slice, and serve the sandwiches.
