Pimento Cheese Deviled Eggs Recipe

Ingredients
  • 8 large eggs
  • 1 cup grated sharp cheddar cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon Dijon mustard
  • ⅔ cup mayonnaise
  • ¼ cup jarred diced pimentos, drained (plus more for serving)
  • ¼ teaspoon smoked paprika
  • 1 tablespoon fresh chives, chopped
Directions
  1. Bring a large pot of water to a rolling boil.
  2. Using a slotted spoon, gently lower the eggs into the boiling water and cook for 12 minutes.
  3. Transfer the eggs to an ice bath and chill for 15 minutes, until completely cool to the touch.
  4. Peel the eggs.
  5. Cut each peeled egg in half lengthwise.
  6. Pop the yolks into a medium bowl.
  7. Add the cheddar cheese, salt, pepper, garlic powder, mustard, and mayonnaise to the yolks.
  8. Beat with a hand mixer until the filling is smooth and creamy with no visible chunks of yolk.
  9. Stir in the pimentos by hand until evenly distributed.
  10. Spoon the filling into each egg white half.
  11. Sprinkle the deviled eggs with smoked paprika, chives, and extra chopped pimentos before serving.
