One-Pan Veggie Pizza Rice Recipe

Ingredients
  • 2 tablespoons olive oil
  • 12 ounces mushrooms, sliced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups pizza sauce
  • 2 ½ cups vegetable broth
  • 2 teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
Directions
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the mushrooms and bell pepper and cook for 5 to 6 minutes, until softened and lightly browned.
  3. Add the garlic and cook for 1 minute, until fragrant.
  4. Add the rice and stir to coat, toasting for 2 minutes.
  5. Add the pizza sauce, vegetable broth, Italian seasoning, red pepper flakes, salt, and pepper.
  6. Stir, cover, and cook on medium-low heat for 20-25 minutes, stirring occasionally.
  7. Remove the lid and stir in the Parmesan.
  8. Sprinkle the mozzarella evenly over the top, cover and cook for 3 to 4 minutes, until the cheese is melted and bubbly.
  9. Garnish with fresh basil and serve straight from the skillet.
