Old-Fashioned Grasshopper Pie Recipe

Ingredients
  • 24 mint (or original) Oreos, divided
  • 4 tablespoons unsalted butter, melted
  • ¾ teaspoon kosher salt, divided
  • 1 (10-ounce) package mini marshmallows
  • 1 ¾ cups heavy cream, divided
  • 3 tablespoons crème de menthe
  • 2 tablespoons crème de cacao
  • 4 ounces cream cheese, at room temperature
Directions
  1. Preheat the oven to 375 F.
  2. In a food processor, pulse 20 Oreos until finely ground.
  3. Add the melted butter and ¼ teaspoon kosher salt; pulse to combine.
  4. Press the crumbs into a standard pie plate, working the crust up the sides and over the bottom.
  5. Bake for 8-10 minutes until firm and fragrant. Set aside to cool completely.
  6. In a large saucepan, heat the mini marshmallows with ¼ cup heavy cream over low heat, stirring often, until almost melted.
  7. Remove from the heat and stir to melt, then stir in the remaining ½ teaspoon salt, crème de menthe, and crème de cacao.
  8. Set aside to cool to room temperature.
  9. Whip the remaining 1 ½ cups heavy cream with the cream cheese to reach stiff peaks.
  10. Fold in the cooled marshmallow mixture, along with food coloring if desired.
  11. Spread the filling into the cooled crust.
  12. Chill at least 2 hours or overnight, then chop up the remaining 4 Oreo cookies and add them as garnish before serving.
