Spring Vegetable And Pesto Pizza Recipe

Ingredients
  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 1 ½ cups bread flour, plus additional for stretching the dough
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 8 ounces mozzarella cheese, shredded
  • ¼ cup basil pesto
  • 2 cloves garlic, peeled and thinly sliced
  • 3 mushrooms, thinly sliced
  • ½ small zucchini, thinly sliced
  • ½ small summer squash, thinly sliced
  • 5 asparagus stalks, trimmed and cut into 1-inch lengths
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 8 ounces burrata cheese
  • 1 small bunch fresh basil
Directions
  1. In a measuring cup, stir to combine ⅔ cup warm water with the yeast and sugar. Cover and set aside for 5 minutes or until foamy.
  2. In a medium bowl, stir to combine bread flour and salt.
  3. Add yeast mixture and olive oil to the flour and stir to form a shaggy dough.
  4. Cover and set aside for 15 minutes.
  5. Using wet hands, pull the dough upward and fold it back onto itself.
  6. Repeat 3 more times, pulling and folding the dough, rotating the bowl as you go.
  7. Cover and set aside 15 minutes, then repeat this process (stretching and resting) 2 more times.
  8. Cover the bowl with plastic wrap and set aside at room temperature for 1 hour, or in the refrigerator for up to 2 days.
  9. Preheat the oven to 500 F or 550 F.
  10. Dust a clean surface with flour.
  11. Place the pizza dough on the floured surface, and use your fingertips to dimple around the edges to form a crust.
  12. Use your hands to stretch the center of the dough to form a 12-inch round or square shape.
  13. Transfer dough to a baking sheet sprinkled with flour.
  14. Top dough evenly with mozzarella, leaving the crust uncovered.
  15. Top with dollops of pesto.
  16. Top the pizza with garlic, mushrooms, zucchini, squash, and asparagus.
  17. Drizzle with olive oil and sprinkle evenly with salt and pepper.
  18. Bake in the preheated oven for 7-9 minutes, or until the crust is browned and the cheese is bubbly.
  19. Top the pizza evenly with torn pieces of burrata. Sprinkle with basil leaves and serve immediately.
