Super-Stuffed Frito Pie Burrito Recipe

Ingredients
1 tablespoon olive oil
1 cup diced yellow onion
2 teaspoons taco seasoning
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon dried oregano
½ teaspoon salt
1 ½ pounds ground beef
1 (15-ounce) can tomato sauce
½ cup beef broth
1 tablespoon tomato paste
1 (15 ½-ounce) can pinto beans, drained and rinsed
4 large burrito-sized flour tortillas
½ cup sour cream
1 ½ cup cooked yellow rice
2 cups Fritos
1 ½ cups shredded cheddar cheese
¾ cup corn kernels
½ cup diced fresh tomatoes
¼ cup sliced pickled jalapeños
¼ cup chopped fresh cilantro
¼ cup chopped fresh scallions
Directions
Heat olive oil in a large pot over medium heat.
Once hot, add the onions and saute for 2 minutes.
Add the taco seasoning, cumin, chili powder, oregano, and salt to the pot. Stir to combine and saute for 1 minute more.
Add the ground beef to the pot. Stir to combine and cook for 5 minutes, stirring occasionally, until the ground beef has browned.
Add the tomato sauce, beef broth, and tomato paste to the pot. Stir to combine and bring to a simmer.
Once simmering, reduce the heat to low, and add the pinto beans.
Stir to combine and cook for 30 minutes, stirring occasionally.
To assemble the burritos, place the tortillas on a clean work surface, and spread with sour cream.
Top with yellow rice, Fritos, and cheese.
Spoon approximately ⅔ cup of the chili on top of the rice, chips, and cheese.
Top the chili with corn, tomatoes, jalapeños, cilantro, and scallions.
Roll up each burrito into a tight cylinder.
Cut the burritos in half before serving.
