Ingredients
1 cup unsalted butter, softened
1 cup packed brown sugar
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups rolled oats
1 cup chocolate chips
Directions
Preheat oven to 350 F
Line 2 baking sheets with parchment paper.
Add the softened butter, brown sugar, and granulated sugar to a large bowl.
Using a hand mixer, beat the mixture for about 3 minutes.
Add the eggs and vanilla and beat again for 1 minute.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the rolled oats and stir well.
Fold in the chocolate chips
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart (about 15 cookies per baking sheet).
Bake for 10 to 12 minutes, or until the edges are set and lightly golden brown.
Cool for about 5 minutes before serving.
