Pumpkin Cream Cheese Spread Recipe

Ingredients
  • 1 small sugar pumpkin
  • 2 teaspoons olive oil
  • ⅛ teaspoon salt
  • 8 ounces of whipped cream cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
Directions
  1. Preheat the oven to 400 F.
  2. Line a baking sheet with parchment paper.
  3. Cut the pumpkin in half.
  4. Remove the seeds and discard or save for roasting.
  5. Brush the pumpkin flesh with olive oil and sprinkle with salt
  6. Place the pumpkin halves cut side-down on the baking sheet.
  7. Bake for 35-45 minutes, until soft.
  8. Once out of the oven, flip the pumpkin halves over and let cool for 30 minutes.
  9. Once cooled, scoop out the flesh and place in a food processor.
  10. Blend until smooth and creamy.
  11. Add the cream cheese to a bowl and add ½ cup of the pumpkin puree, maple syrup, vanilla, ground cinnamon, and pumpkin pie spice.
  12. Stir with a whisk until combined.
  13. Serve the cream cheese right away or store in the fridge until ready to serve.
