PB+J Frozen Cottage Cheese Bark Recipe

Ingredients
  • 1 (24-ounce) container 4% milkfat cottage cheese
  • ¼ cup honey
  • 1 pint fresh raspberries, frozen until firm, divided
  • ¼ cup raspberry jam
  • 2 tablespoons peanut butter
  • ¼ cup roasted peanuts
Directions
  1. Combine cottage cheese, honey, and raspberries in a blender or food processor, reserving 4 or 5 frozen raspberries in the freezer to sprinkle over the bark.
  2. Blend or process until smooth, scraping down with a spatula as needed.
  3. Line a baking sheet with parchment paper.
  4. Spread the cottage cheese mixture evenly over the surface, about 1 centimeter thick.
  5. Dollop or swirl raspberry jam on top.
  6. Heat the peanut butter in the microwave until pourable.
  7. Drizzle the peanut butter over the bark.
  8. Sprinkle the bark with roasted peanuts.
  9. Break up remaining frozen raspberries and sprinkle over the surface.
  10. Freeze the bark for at least 2 hours or overnight.
  11. Break up bark into large shards. Enjoy or store in an airtight container in the freezer.
