Elevated Tuna Salad Sandwich Recipe

Ingredients
  • ¼ cup minced celery
  • ¼ cup minced red onion
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 1 teaspoon granulated sugar
  • ¾ teaspoon kosher salt, divided, plus additional for seasoning
  • ½ teaspoon cracked black pepper, divided, plus additional for seasoning
  • 10 ounces grape tomatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped fresh parsley, divided
  • 2 (5-ounce) cans albacore tuna in water, drained
  • ½ cup mayonnaise
  • ½ teaspoon Dijon mustard
  • 2 teaspoons finely chopped fresh dill
  • 1 baguette, cut into thirds and sliced horizontally
  • 2 cups spring salad mix
Directions
  1. To start the tuna salad, place the minced celery and onion in a small jar and set aside.
  2. In a small saucepan, add the apple cider vinegar, water, sugar, ½ teaspoon salt, and ¼ teaspoon black pepper. Bring to a simmer.
  3. Once simmering, pour the hot liquid into the jar with the onion and celery.
  4. Cover the jar and refrigerate until ready to use.
  5. Preheat the oven to 425 F.
  6. Place the tomatoes on a small baking sheet.
  7. Toss the tomatoes with the olive oil, remaining ¼ teaspoon salt, and remaining ¼ teaspoon black pepper. Coat the tomatoes completely.
  8. Bake for 10 to 12 minutes, or until the tomatoes begin to brown and break down.
  9. Once the tomatoes are done baking, sprinkle with 1 teaspoon chopped parsley and set aside.
  10. Place the drained tuna in a medium bowl and use a fork to break up large chunks.
  11. Add the mayonnaise and mustard. Stir to combine well with the tuna.
  12. Strain the celery and onion, discarding the liquid.
  13. Add the celery, onion, remaining parsley, and fresh dill to the tuna and season with salt and pepper.
  14. Mix to combine the tuna salad.
  15. To start assembling the sandwiches, spoon tomatoes onto the top halves of the baguettes and tuna salad on the bottom halves.
  16. Divide the spring mix over the baguette halves with tuna.
  17. Combine the top and bottom halves to make three individual sandwiches and serve.
