Chilled Soba Salad With Leftover Rotisserie Chicken Recipe

Ingredients
  • 4 Persian cucumbers
  • 1 tablespoon + 1 teaspoon coarse sea salt, divided
  • 8 ounces dried soba noodles
  • 2 tablespoons sesame oil, divided
  • 2 tablespoons soy sauce, divided
  • ¼ cup rice vinegar
  • 2 tablespoons white miso paste
  • 2 tablespoons Kewpie mayo
  • 1 tablespoon chili oil
  • 1 tablespoon mirin
  • 1 tablespoon grated fresh ginger
  • 1 large clove garlic, minced
  • 2 cups shredded rotisserie chicken
  • 1 cup finely shredded Napa cabbage
  • ½ cup julienned peeled carrots
  • 2 scallions, thinly sliced
  • 2 tablespoons thinly sliced purple basil
  • 1 Fresno chile, thinly sliced
  • 1 tablespoon sesame seeds
  • 2 tablespoons chili crisp
Directions
  1. Cut the ends off the cucumbers and split them lengthwise.
  2. Cut the cucumber halves into 1-inch pieces.
  3. Transfer the cucumbers to a Ziplock bag and seal, pushing out the air.
  4. Use a rolling pin or mallet to gently smash the cucumbers, being careful to keep the pieces intact.
  5. Transfer the cucumbers to a colander set over a bowl and sprinkle with 1 tablespoon sea salt. Let sit for 20 minutes.
  6. While the cucumbers are draining, bring a large pot of water to a boil with the remaining 1 teaspoon of sea salt.
  7. Add the soba noodles and cook to al dente according to package directions.
  8. Drain the soba and run under cold water to stop the cooking.
  9. Transfer the soba to a large bowl and toss with 1 tablespoon sesame oil and 1 tablespoon soy sauce. Set aside.
  10. In a medium bowl, make the dressing by whisking together the rice vinegar, miso, mayo, chili oil, mirin, ginger, garlic, remaining 1 tablespoon sesame oil, and remaining 1 tablespoon soy sauce.
  11. Add the chicken, cabbage, carrots, scallions, and drained cucumbers to the soba.
  12. Pour over the dressing and toss everything together to coat.
  13. Cover and chill the salad for at least 1 hour.
  14. Transfer the salad to a serving bowl or individual dishes and garnish with the basil, Fresno chile, sesame seeds, and chili crisp. Serve right away.
