Chocolate-Covered Ice Cream Bites Recipe

Ingredients
2 pints ice cream of your choice, left at room temperature for 10 minutes until easy scoopable
20 sandwich cookies of your choice
3 cups chocolate chips of your choice
ΒΌ cup neutral oil
Optional Ingredients
Chopped nuts, for topping
Crushed cookies, for topping
Candy, for topping
Sprinkles, for topping
Melted chocolate, for drizzling
Directions
Line a small baking sheet with parchment paper and set aside.
Dip a small ice cream scoop into a glass of warm water.
Use the scoop to portion a mound of ice cream onto each cookie, re-dipping the scoop in warm water as needed.
Use gloved hands to gently press each mound of ice cream into a smooth dome.
Place ice cream bites onto the prepared baking sheet and freeze until very firm, at least 2 hours (or overnight).
Melt chocolate chips and oil in a bowl set over a double boiler or in the microwave until smooth.
Dip one ice cream bite at a time into the melted chocolate, so the ice cream dome is completely covered.
Repeat with remaining ice cream bites and return to the baking sheet.
Drizzle a few ice cream bites at a time with remaining melted chocolate, if desired, and add any additional toppings before the chocolate sets.
Freeze until ready to serve.
