Ingredients
  • 3 cups all-purpose flour, plus more for kneading
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 3 teaspoons baking powder
  • ½ cup + 1 tablespoon heavy cream, divided
  • 1 egg
  • 2 teaspoons vanilla extract
  • ½ cup (1 stick) frozen butter
  • 1 ½ cups mixed berries
  • 2 teaspoons lemon zest
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 tablespoon coarse sugar
Directions
  1. In a medium or large bowl, combine flour, granulated sugar, salt, and baking powder.
  2. In a separate large bowl, whisk ½ cup heavy cream, egg, and vanilla extract.
  3. Grate the cold butter using the large side of a box grater.
  4. Add grated butter to the flour mixture. Using your hands, quickly mix the butter into the flour.
  5. Pour the flour-butter mixture over the heavy cream mixture.
  6. Combine dough using a rubber or wooden spatula.
  7. Gently mix in the berries and lemon zest, and transfer dough to a floured work surface.
  8. Shape dough into a disk about 7 inches in diameter, sprinkling on extra flour if the dough is too sticky.
  9. Wrap dough in plastic wrap and transfer to the freezer for 30 minutes.
  10. Preheat oven to 400 F and position a rack in the middle.
  11. Meanwhile, make the glaze by combining powdered sugar and milk in a small bowl. Set aside.
  12. After 30 minutes, unwrap the dough and slice into 8 wedges.
  13. Transfer scones to a parchment-lined baking tray, leaving about 2 inches of space between each scone.
  14. Brush scones with remaining 1 tablespoon heavy cream.
  15. Sprinkle with coarse sugar.
  16. Bake on the middle rack for about 20-22 minutes, or until golden brown.
  17. Let scones cool for a few minutes before drizzling on the glaze and serving.
