Gyros
Ingredients
  • 1 tablespoon + 2 teaspoons vegetable oil, divided
  • ½ cup diced yellow onion
  • 2 minced garlic cloves, divided
  • ½ pound ground beef
  • 3 tablespoons fresh, chopped parsley
  • 1 teaspoon fresh thyme leaves
  • 1 ½ teaspoon salt, divided
  • ½ teaspoon ground black pepper, divided
  • ¾ cup strained yogurt
  • ½ cup pilled and shredded cucumber
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • ½ tablespoon finely chopped fresh mint
  • 2 medium size Julienned potato
  • 3 Pita bread
  • ½ Julienne sliced red onion
  • 5-6 slices tomatoes
  • 5-6 ounces cucumber, 3-4 inches long Julienne
  • 1 cup chopped lettuce
Directions
  1. In a hot skillet, add a tablespoon of vegetable oil and diced onion. Cook on medium heat until the onion is soft and translucent.
  2. Add one minced garlic clove and cook for one more minute.
  3. Then add the ground beef, thyme, parsley, ½ teaspoon salt, and ¼ teaspoon black pepper.
  4. Cook until the meat is cooked. Set aside.
  5. In a bowl, combine the strained yogurt, shredded cucumber, olive oil, lemon juice, dill, mint, garlic, and ¼ teaspoon salt. Set aside.
  6. In another bowl, combine Julienned potato, ¼ teaspoon salt, ¼ teaspoon black pepper, and 2 teaspoons vegetable oil.
  7. Cook them in an air fryer for 15 minutes at the highest setting until golden brown and crispy.
  8. Once the potatoes are cooked, assemble the gyros by spreading about 2 tablespoons tzatziki on pita bread, then add red onion, tomatoes, cucumbers, ground beef, potatoes, and lettuce. Wrap it inside a piece of paper or enjoy it as is.
