Crispy Coconut Baked Chicken Breasts Recipe

Ingredients
  • 2 chicken breasts
  • ½ cup coconut milk
  • ¼ cup flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup desiccated coconut
  • ⅓ cup ground almonds
  • 1 large egg
  • 1 tablespoons oil
Directions
  1. Place the chicken in a bowl and add the coconut milk. Cover with plastic wrap and move to the fridge for at least 1 hour.
  2. Whisk the flour, salt, and black pepper.
  3. In another large enough bowl that will fit the chicken breast, mix the coconut and ground almonds.
  4. Whisk the egg.
  5. Add the oil to a baking dish. Set aside.
  6. 30 minutes before cooking, turn the oven to 400 F.
  7. Take one of the chicken breasts and let the coconut milk drip off the meat.
  8. Dip it in the flour, then in the egg, and lastly in the coconut mixture. Repeat with the other piece of meat.
  9. Place the chicken on the baking tray.
  10. Bake on the middle rack for 40-45 minutes, or until golden brown on top.
