Ingredients
  • 2 pounds russet potatoes
  • 5 minced garlic cloves
  • 2 tablespoons avocado oil
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon coarse salt
  • ½ teaspoon pepper
Directions
  1. Preheat the oven to 400 F.
  2. After washing them, peel the potatoes.
  3. Chop the potatoes into 1-inch cubes.
  4. In a large bowl combine the potatoes and oil. Stir to coat the potatoes.
  5. Now add the garlic, rosemary, salt, and pepper.
  6. Spread out the potatoes on a large sheet pan in an even layer.
  7. Cook in the oven for 30 minutes, stirring halfway or until browned and crispy.
  8. The rosemary and garlic roasted potatoes are ready to serve.
