Ingredients
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon Worcestershire sauce
  • 2 cups peeled and diced sweet potato
  • 1 (15.5-ounce) can dark red kidney beans, drained
  • 1 (15.5-ounce) can black beans, drained
  • 1 (4-ounce) can green chiles, undrained
  • 1 (28-ounce) can tomato puree
  • 2 tablespoons sauce from can of chipotle peppers in adobo sauce
  • 1 chipotle pepper in adobo sauce (from can)
  • 1 cup beef stock
  • 1 teaspoon salt, or to taste
  • 1 teaspoon pepper, or to taste
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
Directions
  1. Heat oil in a large skillet over medium heat.
  2. Once hot, add the onion and garlic and cook for 2 minutes, until soft and fragrant.
  3. Add the turkey and crumble while cooking. Cook until browned, about 5 minutes.
  4. Transfer the mixture to a slow cooker.
  5. Add Worcestershire sauce, sweet potato, and all of the beans to the slow cooker.
  6. Cover with diced chiles, tomato puree, adobo sauce, and chipotle pepper.
  7. Add the beef broth and seasonings. Stir to combine.
  8. Cook on high for 4 hours or low for 6 hours. Serve.
