I mostly agree with this assessment. However, I did go this Thursday at 6:30 without a reservation and we (a party of 2) managed to get a table, but only barely. They wanted to seat us at the bar and I think if we'd come at 7 that would've been the only option.
Seatingwise Thursdays at Pizzaiolo are a hybrid weekday/weekend affair.

How was your dinner? I don't usually go on Thursday because the head chef often takes the night off.

You are right about the chef's night off being Thursdays, mostly...but the sous chef is fantastic and creative and helps write the menu and come up with all of the recipes as well. i have eaten there on Thursdays a few times and it has been wonderful as always

Great as ever. But I stick religiously to the pizzas. I did have a farro salad that was very memorable.
