Simnel Cake recipe?
I'm doing Simnel cakes for Mothering Sunday and I wondering if anyone has a recipe that they recommend. I've never been one much for fruitcake type cakes so I don't have a standard to fall back on. TIA.

Although my family is from England, I've never heard of this holiday. Wiki explains it well. Sounds like a very sweet tradition! http://en.wikipedia.org/wiki/Simnel_cake

I've never had simnel cake. But I know that Nigella Lawson has a recipe in one of her books ("Feast?") and it's gotten good reviews on other sites where I hang out.
