best Butcher's in Williamsburg or Greenpoint?
I was able to purchase beef bones (for stock) at Steve's on Nassau. I love their kabanosy and kielbasa.
Mario's on Manhattan Ave, (Italian area) is great for lamb...
Otherwise, is it possible to purchase prime meats in this area of Brooklyn? In particular I need to find beef short ribs.

Have you tried Model T meats on Graham Ave I think between Skillman and Jackson? Also try Emilys Pork Store, that place is pretty cute. Gerry is a neighborhood character. He makes his own sausages. They are also on Graham between Withers and Frost. I am not a big meat eater but my friends rave about Model T because it is good and really affordable. Don't let the crazy brothers and the sawdust on the floor scare you. It is also a great place to meat the local firefighters, they hang out there around dinner time to buy the fixins for dinner.

I live close to Model T and I appreciate a 3 dollar whole chicken but do you have any idea if it's naturally raised? grass fed? organic? I just wonder if anyone knows where their meat comes from. Otherwise I suggest Dines Farms at the Greenmarket in Mccarren park on Saturdays

Dines Farm no longer comes to the McCarren farmers mkt, unfortunately.
Replaced by someone else, who I haven't bought from yet but doesn't look as good.

i know! i haven't gotten anything from the new guy either because the prices are WAY too high. i was thinking maybe Dines takes a hiatus and returns in the spring? I know they go to Fort Greene too.

Dines got booted from the McCarren greenmarket. It was the talk of the town last fall. Apparently the dude selling was a distributor, not a producer, which I guess is not allowed in the Greenmarket. It's a shame because we got so much stuff there, but the new place's prices are astronomical.

Lorimer Market! 620 Lorimer St. More consistent than Model T or Mario's, I've found--good variety, great quality, and they'll order anything for you in about a day if they don't have it on hand.

I assume OP means Mario & Sons on Metropolitan btwn Leonard and Manhattan.
He doesn't get prime beef -- does Lorimer? -- any more but his steaks are solid. Skirt particularly good. And I think his pork sausage is better than Lorimer Mkt's. (his dried sausage also very good, and he has good deal on a bunch of different imported dried pasta brands.)
