ISO non-mushy Sweet Potato Casserole Recipe
I've been trying to recreate a sweet potato casserole that I had at a Thanksgiving potluck. There were 3 such casseroles at that party and the one I really really liked was kind of stiff - stiff enough to be cut into pieces if one wanted to. It was baked in a disposable foil tray. The edges were nicely browned and caramelized. It had a brown sugar and pecan topping scattered on top. I've tried a couple of recipes so far (and browsed many others that looked similar) and each time there was little or no caramelization on the edges and it was definitely mushy - certainly not stiff enough to cut into pieces. Do you have a sweet potato casserole recipe that browns around the edges and is stiffer than mashed sweet potatoes? What's the secret?

I wonder if the one you had was made with egg. That might explain the stiffer texture. I look forward to other people's guesses and/or recipes.

Hi H,
The recipe I tried at home did have a couple of eggs. :( I baked in a ceramic baking dish though and not in a foil/metal pan. I suppose that could've had to do with some lack of browning. Perhaps I should try baking at a higher temperature or longer? The recipes I found said ~30 minutes at 350 deg. F.

Are the sweet potatoes mashed? If so, mash and put on a sheet pan or something lined with a thick pad of paper towels and let stand to get rid of excess moisture.

Yup, they are mashed. Thanks, I will try that. I guess baking the potatoes to cook them instead of steaming or boiling might also help dry them out - it's just that I don't like how energy inefficient that is. Perhaps if I bake them while I am roasting other veggies in the oven, it wouldn't be so bad.

I'm sure I'll get flamed for this, ;) but you can always microwave them if you don't want to use the oven - it's better than boiling or steaming.

I don't know if you found your recipe yet. I saw this one one Seriouis Eats today. My family does a similar recipe. I think we used evaporated milk instead of whole milk - but that may be a Southern thing :-)
