Interesting article in New Times today regarding Sushi at Evolution. Has anyone been recently?

  1. I went in january. I did not do omakase though, could be interesting. I thought the sushi was a little better than bond st btw.

    1. Tried some of their sushi while sitting at the bar (the regular bar, not the sushi bar) a couple months ago. Was underwhelmed (though I love their bar). I think the biggest difficulty is that it is virtually impossible to have really pristine fresh fish unless you're doing a brisk business (and thus moving through your inventory quickly) - which they are not. Indeed, the whole sushi thing was completely sub rosa when we were there. The bartender had to tell us about it, and the poor sushi chef is literally hidden away in a darkened room behind a curtain. Why they feel compelled to keep it such a secret is unclear to me.

      What a ridiculously patronizing article incidentally. As if we all needed a full paragraph explanation of how nigiri is made. And the whole sushi etiquette lesson, presumably just lifted from someplace like sushifaq.com. I'm surprised we didn't get an extended explanation of how sushi is often made with - imagine this - raw fish!

        You mean I have been eating raw fish all this time? Eeeewwww.

          TP: you can avoid that raw stuff by patronizing sushi restaurants with menu sections titled "cooked rolls". There's many in Miami.
