Dommy’s Dinners: Breakfast Time! Purslane Feta Olmelet!
Women can not live by dinners alone! Afterall, first comes BREAKFAST! :D And for our own Sunday Brunch, I decided to use the Verdolagas I had left over from the Chile Verde:

And make myself a Mediterranean style omelet!!
Although I have been eatin Verdolagas all my life, only recently have I really understood anything about them. They supposedly originally came from India and are SUPER healthy. They are a high plant source of Omega 3s! They are used in all sorts of cuisines… including greek… which is why I though the flavor combo with Feta would go PERFECT!
So at first I started with sautéing them in with a bit of olive oil and garlic. They take a little longer to wilt than spinach… but are just as easy to prepare…

Then I poured over some beaten eggs. Cooked almost all through…

And then flipped and sprinkled finely cubed feta! I then just folded over and heated until the feta started to melt… The smell of the feta heating and the grassiness of the purslane was intoxicating!!

To keep with the theme, I served along side olive bread and hummus.

And the flavor combo was indeed killer. Very different for an omelet, but still very good. Herbal, Creamy, and fortifying. It was an excellent meal to start the day and hold off the hungries… until Dinner…

That omelette looks yummy, Dommy. Thanks for posting it. I have two bunches of purslane at home and I was thinking of trying something new this week. Now I know what I am going to do with them:)

Dommy, Add my thanks too: yesterday I went on a field trip to a beautiful organic orchard full of heirloom and new hybrid stone fruit trees - in between the rows of trees there was tons of verdolagas growing - I couldn't leave without pulling some - don't have a huge amount, maybe a bunch more or less - and I have feta and eggs so your omelet sounds great!

They don't wilt like spinach, so even just a little bunch is fine for an Omelet! :D
