Sara Lee-style pound cake at home
I know, this is a strange request, but I'm trying to figure out how to make a "Sara Lee-style" pound cake at home. One with a really tight, uniform crumb & mild flavor. Every recipe I try comes out dense & heavy. Can anyone recommend anything?

I tried this recipe which appeared in our local paper the other day. It produced a very tender, tight, and uniform crumb pound cake with a mild flavor. In fact so mild that I decided to use lemon zest in it next time. You could easily make it without the blueberries. But if you do use them, I would roll them in a little flour before adding to the batter. That way they won't sink, as mine did. The recipe did not state this. Everytime I make a new recipe, I work in blind obediance, not always thinking ahead! Anyhoo....here's the recipe:
Fresh Blueberry Pound Cake....
11/2 cups fresh blueberries (or not)
1/2 cup butter
1 cup sugar
2 large eggs
1 tsp vanilla extract
2 cups cake flour
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
Preheat oven to 350. Grease and flour 9x4 loaf pan. Cream together butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine dry ingrediants and add to creamed mixture, alternating with the milk. Fold in floured berries, if using. Pour into prepared pan and bake 60-70 minutes or until cake tests done. Cool 5 minutes and turn out on a rack.

Rose Levy Berenbaum's Cake Bible's recipe for pound cake is similar to SL (she actually mention SL in the into to the recipe):
3 tbsp. milk
3 eggs
1.5 tsp vanilla
1.5 cups sifted cake flour
3/4 cup sugar
3/4 tsp powder
1/4 tsp sale
13 tbsp butter, softened
Mix ingredients and bake at 350 for 55-65 min in 8x4 loaf pan or 6 cup tube pan

Of course! I don't knwo why I didn't immediately think of RLB! Must have been having a "blonde" moment...which is strange, what with me being a brunette & all...
