cleaning out my freezer challenge!
I'm relocating out of state soon and have to clean out my freezer. I have roughly 12 days. I would prefer to eat or give away what is in there. So here is what I have (aside from coffee and vodka... luckily we can ship both of those...
:)
two bags yellow corn
1 bag green beans
2 bags alexia "crinkles" fries
8 cans assorted juice (punch, orange, lime, cranberry)
5 assorted bags frozen fruit (cherries, rasp & mixed)
1 pre-made pie crust
2 gallon bags meyer lemon juice
2 tubes odense almond paste
partial can of tomato paste
3 chipotles
1 pound hamburger
I just finished cooking all the meat in there (poached 3 pounds of chicken breasts)... and made some pulled pork with a shoulder on sunday. any ideas for the chicken would be great (no enchiladas please... made some with some other frozen meat last week). I'm thinking a variety of chicken salads might be nice. I think I'll have at least six cups of shredded chicken.
thanks in advance.
:)

Frangipane tart could use up some almond paste, the pie crust and some frozen fruit.
Completely low-brow - but taco fries with the hamburger, chipotles and tomato paste.

I'd make a cherry pie with a streusel top using some almond paste in the topping.
Mixed berry smoothies for breakfast.
Add the chipotles to your pound of hamburger for a tasty taco filling. Serve with a corn and black bean salad.
Meyer lemon and raspberry slushies! And throw in the vodka, who wants to ship it?

I'd make a big batch of punch with the various juices and the vodka, invite some friends over, and serve it with floating berries instead of ice.
I think you could combine the burger meat with the tomato paste and some of the chipotle and make some very tasty sloppy joes. Serve with the fries and green beans.
The corn is great in salads. You could make a southwest chicken salad with black beans, corn, and salsa instead of salad dressing.
And I agree about cherry pie with some almond in a top crust.

Yes, a party with punch with the juices, frozen fruit, and vodka is the first thing that popped into my mind. The corn: enough to make a wonderful Mexican corn soup (recipes in Diana Kennedy and, I think, Rick Bayless).
The fries: throw them out.

You're short on time, but if you made lemon curd couldn't you ship it?
I like corn sauteed with some black pepper, but I'm a weirdo like that. This sounds like a job for "Everything pasta" and "Every berry pie" with a hint of lemon.

Yep, I'm with everyone else - have a goodbye backyard picnic with your friends. Make chicken salad and some rolls, corn pudding, a cherry/almond crisp or cobbler, burgers and fries (those taco fries actually sound pretty darn good!) and fruity margaritas with the lemon juice/other fruit! (And then you can get them to help you move the last few boxes!)
