Yearn...sadly, it's far too early hereabouts, where nothing says "late June, early July" like strawberries. We have strawberry shortcake for July 4th.

Ricotta Pie! It's more like a cake made with ricotta (certamente?!), eggs, orange zest, a filler like rice or a small pasta, sugar, maybe vanilla and/or anise flavor, then baked. There are many variations on a theme for this dolce.

My Nonna (grandma) makes something extremely similar to this and calls it "Easter Pie."

I make a plain ricotta pie this year, because that's what my husband's family thinks as traditional, but I miss my grain pie! It is SO worth the effort. I had enough to make two last year and the second one froze really well.

Buona Pasqua! I see that my reply to you that was entirely in Italian was removed. The censors must have thought it was objectional material. I said that translation of 'Nonna' was not necessary because my wife is of Italian heritage.
Her late grandmother used to bake an Easter cake in the shape of a ring which had about 6 to 8 eggs still in the shell sticking out of the dough. It was quite an elaborate creation and very tasty. I don't remember how well baked the eggs were.

there's a whole other thread about the easter ring. I make it every year. and i attach a picture..... it's actually pretty easy, but we eat it for breakfast rather than dessert.

Yes, that looks very similar to Easter ring that my wife's grandmother made. She was from Petilia Policastro in the province of Crotone in region of Calabria.

Found a tasty looking "berry pudding" on foodtv.com: angel food cake/sponge cake with layers of berries and coulis and fresh cream...mmmm. also considering the berry tiramisu with yogurt instead of marscapone....

There will always be a special place in my heart for the old Easter Bunny cake, made from two round cakes and decorated with coconut:

I LOVED this cake as a kid. I couldn't believe my mommy turned two regular cakes into a bunny. I don't endorse this particular recipe as I've never tried it, but it has a good picture of the finished product and a diagram of how to make the ears and bow tie.
It can really be done with any type of cake, so you can fancy it up with the actual cake and frosting and decorations. But you must have black licorice whip whiskers! And my mom usually frosted the bow tie pink.

I am making Pasteis de Coco, the Leite's recipe. I did a run through on Tuesday and they were wonderful. Also making chocolate dipped coconut macaroons as well as a fruit salad.

I am using these (Pasties de coco) as mignardises at the end of the meal in mini muffin tins. Do these need to be made day of or will they keep frozen or refrigerated?

I always think macaroons with Easter, even though they're apparently for Passover. Go fig. So there'll be macaroons, but I found a gorgeous cake decorated with pistachios and rose petals on Epicurious that I might try since it matches my otherwise Middle Eastern menu. What says spring celebration more than that?

We have brunch- with way too much food, but always room for desserts! One of my SIL makes the tradiional bunny cake, another makes peanut butter cups, truffles and lots of Italian goodies ( including pizza gaina - nt sure of the spelling). A neice is making mini whoopie pies, and chocolate chip cookies. I am going to make a fruit salad. Will have lots of extras for everyone to tuck into their easter baskets.

No-you are correct, it is not a dessert- it is the cheese and meats ( lots of pepperoni). I just mentioned it becasue MY SIL only makes it at Easter, and I absolutely love it. I have never made it, but enjoy it every Easter- and I am one of the few in the family who likes it! Heavy, and maybe even a heart attack on a plate, but so good!

Sadly, my kids nixed the strawberry shortcake idea, so instead: Ice cream pie with chocolate cookie crust, a layer of strawberry sorbet and a layer of vanilla ice cream. Decorate it with mini jelly beans and other egg shaped candies and strawberry coulis for pouring around. I made it this afternoon with my kids - they loved smooshing the ice ream into layers.

key lime-coconut cake (angel cake with lime zest, cut into layers, one filling of lime curd, the other with lime-d up seven-minute frosting, also frosting the cake and covering with plain and toasted coconut. Jello eggs on lime jello "grass" for the under-10 set.
