Cornish Game Hen Recipe Ideas?

I've never made cornish game hen before, but it's on sale and I'd like to give it a try. I'd love some easy--as in something I can put together even after a long day--deas for preparing it--

  1. I would prepare just as a chicken. I usually slice them in half (along the backbone) and marinade. Then place non-skin side down and roast. They turn out great. One whole chicken is usually too much for either of us, depending on the size.

    1. I stuff with wild rice and roast the same as a chicken. We have never had the problem of 1 whole one being too much for 1 person ;)

      1. I pour half of a mixture of white wine (about 1/2 c), soy sauce (about 1/4 c ), and sesame oil (a dollop) over and bake breast side down for 15+ minutes, turn breast side up and add the rest of the sauce and finish baking 30-45 mins. The left over sauce is great on rice.

          at what temperature would I set the oven for? thanks!

          1. Brine them first.

            1. I cut mine in half and marinate them in a maple syrup/soy/mustard and cinnamon mixture for a while and then throw them on the grill or roast them.

              1. Roast them on a grill or in the oven. At 350-375 they should take about an hour -- 10 minutes longer if you stuff them with, say, a stuffing of cooked rice, scallions, currants and chopped chicken livers.
