Please - recipes for leftover ham?
I have a lot of a baked smoked ham left. Can't eat it all myself. Could anyone suggest recipes good enough to cook for friends? Thanks in advance.

Quiche, mac & cheese with ham, bean soup, split pea soup, pinto beans

Everything's better with ham:
hmmm - mac 'n cheese with ham and peas! Fried Rice with ham and peas! Pasta with ham and peas. Home Fries with Ham, Peppers and Onions. Chinese broccoli and smoked ham.
Easy Islander Chicken
1/3 cup olive oil
3/4 cup diced ham
1 chicken, cut in pieces
1 cup sliced onions
2 garlic cloves, minced
3 tomatoes, chopped
2-1/2 cups water
2-1/2 cups raw long grain rice
3/4 cup chopped green pepper
1 bay leaf
1/2 tsp. to 2 tsp. salt
1/2 tsp. cumin seed
1/8 tsp. saffron
-Heat olive oil in large skillet or Dutch oven, saute chicken, ham, onions and garlic until chicken pieces are browned. Add tomatoes. Cover. Simmer for 20 minutes.
-Add remaining ingredients, bring to a boil - lower heat, cover, simmer for another 20 minutes until the rice is done (add additional liquid if needed)
Optional - add clams near the end of the cooking time, or 1/2 cup of cooked bay shrimp just before serving.

Here's a link to an Epicurious recipe for Hearty Lentil and Ham Soup which includes a cinnamon stick for very interesting and great flavors and I almost always cut back a bit on the amount of water called for in the recipe:

There is also a different kind of mac & cheese recipe at epicurious using rigatoni, ham, tomatoes and feta cheese; I would never think of putting those ingredients together but it is a deliciously different mac & cheese idea.

Love the dish I make with leftover ham, chicken or turkey chunks, green olives,red peppers, noodles, cheese and bechemel sauce. Hate when there is no leftover ham, there is always so much you can do with it, inc. cutting into ham steaks and then freezing it, so you can grill it for an easy meal anytime.

The ham will perk up any bean soup. Lentils, white beans, greens, etc. A world of difference.
You can also just serve it thinly sliced on a plate of pickled pearl onions, cornichons, and broiled raclette or gruyere cheese with some chilled Alsatian wine.
A good batch of fried rice is always popular. Spike it with plenty of ginger and garlic to balance the ham flavor. Go easy on the soy since i take the ham is pretty salty to begin with.
Pasta, too ... something creamy and unctuous. Or a lighter white wine sauce.
It's also a nice surprise when diced ham is tucked into a buttery spanish tortilla.
Buy frozen puff pastry (or make it yourself if you insist) and make ham and cheese pastries. If you're lucky enough to have leftover risotto, combine it with some parmesan, shape into balls, tucking in a cube of ham into the center. Fry in fairly deep pan with olive oil and eat hot.

Is ham good with regular risotto? Because I'd like to make some, and I was thinking of folding some ham into it. What else would be good -- some peas maybe? Ham and pea risotto?

if prosciutto works, i figure holiday ham would be a fun variation. Ham croquettas have always worked for me with the rice, so the risotto, should come out beautifully. Peas would be delicious, both that and the ham added in the end. If you had the ham bone and had ham stock (productive, you) you could use that for the risotto. A fresh herb garnish would be lovely for it, something like oregano ... or even mint to cut that rich salty edge.

Thank you everyone - all suggestions sound delicious. I actually have SO much ham that I think I'll do the Jackie de suggestion of cutting into steaks and freezing. But more suggestions welcome of course. Don't stop.

Cut a chunk into cubes, fry it in a pan, and use as ham croutons in your salad.

Here's an old chestnut: ham loaf. Actually pretty good; you grind up the ham in a food processor, mix with an equal amount of fresh ground pork...I usually go to Joy for the basic recipe and then spruce it up a bit, but it comes out slightly sweet and always juicy and flavorful.

Oh lord this is so retro. But just today I made a ham spread. cut the ham into large pieces and pulsed in the food processor with , mayo,a little relish. It was great spread on toast with avacado slice.

We had ham and scrambled aggs and asparagus last night. Tonight it's ham and asparagus risotto. Tomorrow is swapped out with a friend's leftover turkey. Then an Indonesian fried rice with ham (and turkey?) and jumbo prawns.
Then its the freezer....

I found an even easier recipe for Sopa de Ajo (Castilian garlic soup with ham) here, and we've had it twice now, it's so good and so simple (takes about 10 minutes of prep time plus the cooking time of 25 minutes):
