Filipino Adobo with Coconut Milk--and no soy sauce

This grew out of an earlier thread:

And here's my ancient--and very easy--recipe for another version of chicken adobo:

4 lbs chicken pieces, or 1 chicken cut into at least 16 pieces

1 small head of garlic, peeled and crushed
3/4 cup vinegar
2 teaspoons salt
1 tablespoon whole black peppercorns
1-2 bay leaves

1 1/2 cups thick coconut milk
5 jalapeno peppers

Combine the garlic, vinegar, salt, pepper and bay leaves in a non-reactive pot. Add the chicken pieces and simmer until the chicken is cooked through. Stir in the coconut milk and simmer until the sauce thickens. Add the jalapenos--sliced, if your want the sauce hotter--and cook another minute.
