cranberry bread season! (recipe)
It's cranberry season (or, more precisely, the season when bags of cranberries start showing up in the supermarket) and my kitchen smells so delicious right now, I had to share what I'm baking (or at least the recipe...) The best cranberry bread I've ever made comes from the first Silver Palate cookbook. Moist,tender crumb, not too sweet, good balance of orange/cranberry/nuts, and not loaded with tons of sugar or oil like a lot of quick breads. Try it! Gorgeous toasted with butter. A very rough paraphrase, below. Enjoy!
Cranberry Bread
Preheat oven to 350F. Grease a loaf pan.
2 cups flour
1 TB baking powder
1/2 cup sugar
1/2 tsp salt
2 eggs, beaten
3 TB melted butter
2/3 cup fresh orange juice
1 cup cranberries
1/2 cup walnuts, chopped and lightly toasted
2 tsp. grated orange peel
Mix dry ingredients in a big bowl. Stir wet ingredients together in a small bowl or measuring cup. Pour wet mix into dry, stir together until just combined. Add cranberries, nuts, and orange rind, and stir lightly. Spoon batter into prepared loaf pan. Bake 45-50 minutes, until lightly browned and a toothpick comes out clean. Cool for 15 minutes, then pop out of pan onto a rack to cool.













I LOVE cranberry-orange nut bread & make at least 12 loaves every Christmas. My recipe is similiar, but softened, not melted butter & I've never toasted the walnuts, but will give it a go this year. Thanks!

The second Silver Palate cookbook (New Basics?) has a wonderful blueberry/lemon tea bread. Probably sweeter than this, but delicious flavor (I know, off topic of cranberries, but on topic of quick breads!). If you say this one is good as well, I'll probably give it a try.
I've got a great recipe I pull out at this time of year for apple cranberry muffins. It's a mixture of whole and unbleached flours, with apples, cranberries and walnuts. I prefer it to the bread recipe you posted largely because I'm not much of a fan of the orange/cranberry combo, and it's hard to find a cranberry recipe that doesn't have orange.
Hmmm, I can tell I'm going to have to do some baking this weekend!

Thanks for this recipe, dixieday! I made it today and it made a nice addition to a dinner of Pork loin with cranberry orange sauce.
