Pickled Eggs
I am looking for a few variations on pickled eggs. I do have my own favorite rendition, but there a so-o-o many different recipes.
For you pickled egg aficionados, what is your favorite accompaniment? Other than a glass of Ale, of course!











The only way I make pickled eggs is to drop peeled hard-boiled eggs into a jar of pickle juice that has had the pickles used up. Any kind, but my favorite is pickled beet juice.
Don't forget the dark bread with your eggs and ale.

How long do the eggs need to stay in the pickle juice until they are ready to eat?

Some pickled egg recipes suggest at least 2 weeks, and others note that the eggs just keep getting better with age...still yummy after MONTHS in their pickling solution.
A note about rubber-y egg whites...this can be prevented by placing the eggs in the jar first,and then pouring the solution over them while it is still hot.

The key to having them around for 2 weeks is to hide them, from yourself and anyone else who may know that you're "holding".
Some hiding places I may suggest: your great aunt's bomb shelter, a storage unit in another county (it usually takes 2 weeks to find the scrap of paper you've written the combination for the lock on), or burying them in your neighbor's backyard in the dark. You just need to be creative, and the rewards will be great.
As far as using a recipe, I never really follow any given one...I use them for inspiration. One of my sons likes dill, another the ones with jalapeno, the third son likes the sweet clove-y kind...gotta go...the eggs need to be put into their ice water bath!
